In collaboration with researchers, industrials and culinary schools from Belgium, France, Poland, Portugal, Spain and Sweden, SEAFOODTOMORROW has created new seafood-based dishes using sustainable and under valorized seafood species.
Each dish was specifically designed to meet the nutritional requirements of pregnant women, children and older adults: vulnerable groups that greatly benefit from seafood consumption. The dishes were selected based on their nutritional quality, scaling feasibility for use in restaurant and catering environments, and of course taste!
The winning recipes have been published in the SEAFOODTOMORROW E-Recipe Book is available below to download.
The SEAFOODTOMORROW project - Nutritious, safe and sustainable fish for consumers of the future, is part of the Blue Growth Program, Innovation Action, Horizon 2020 of the European Union, and started in 2017 up to 2021.
